Dr Ever Hernandez Olivas postdoctoral fellow with research interests as follows:
- In vitro gastrointestinal digestion of foods and food components, especially assessing the impact of different host-related gastrointestinal characteristics (e.g. healthy adults, elderly, infants and patients with cystic fibrosis).
- The impact of inherent food characteristics (composition, origin, structure, etc.) on nutrient digestibility.
- In vitro bioaccessibility of bioactive compounds and their subsequent impact on human health.
- Food processing, preservation and development of new food products by evaluating nutritional, physicochemical, structural and sensory properties.

GIANT LEAPS: Gap resolutIon in sAfety, NuTritional, aLlergenicity and Enviromental assessments to promote Alternative Protein utilization and the dietary Shift
- EU project is accelerating the transition from animal-based to alternative dietary proteins to work towards a safe, health-promoting and sustainable food system.
- The GIANT LEAPS consortium brings together 34 leading partners from 13 EU member states and 4 associated and affiliated countries (Canada, Serbia, Switzerland, United Kingdom).
