  • MASTER (Microbiome Applications for Sustainable food systems through Technologies and EnteRprise) is a Horizon 2020 Innovation Action being coordinated by Prof Paul Cotter, Teagasc. The 30 partner project commenced in January 2019 and received European Union funding of nearly €11 million over 4 years (Grant Agreement No. 818368).
  • Micro-organisms are found in every ecological niche explored and their existence facilitates ours! We can discover the make-up and function of many microbial communities (microbiomes) through the use of DNA sequencing technologies.
  • Scientists within MASTER are using high throughput sequencing to map microbiomes across a range of food and non-food environments.
  • The project will improve the quantity, quality and safety of food, by developing microbiome products, foods/feeds, services and processes. Knowledge generated within MASTER will be applied across multiple food chains, to include marine, plant, soil, rumen, meat, brewing, fruit and vegetable waste, and fermented foods.
