Current Projects
This Marie Curie Fellowship project focuses on extracting and applying seaweed-derived bioactives (proteins, starches, polyphenols) for sustainable food production. It aims to explore their chemical properties and therapeutic potential, investigate their role in food matrix development, and study biopolymeric nanofillers for enhanced food systems. The project also seeks to improve the bioaccessibility, nutritional value, and functionality of food products using stabilized seaweed bioactives. Ultimately, it aims to offer innovative solutions for European food manufacturers to develop nutrient-rich, sustainable nanofoods, promoting health and advancing sustainable food practices.
