Technologist – Food Structure

Research Interests

• The application of advanced microscopy techniques (e.g. SEM, CLSM, Raman, high-speed camera, VR, etc.) and expert image processing and interpretation to enhance our understanding of food structures.
• Ingredient identification and the examination of dairy and other food product microstructures.
• I also manage the day-to-day running of the National Food Imaging Centre at Teagasc Moorepark. I support researchers and industry clients in solving product development difficulties, identifying issues and helping with product characterisation.
