Marina Stramarkou is a Marie Skłodowska-Curie Postdoctoral Researcher. Her research interests focus on innovative and sustainable food processing technologies, with particular emphasis on ultrasound-assisted processing and extraction, emulsification and encapsulation of bioactive compounds.
Her current research focuses on developing innovative emulsions to improve the stability and delivery of omega-3 fatty acids. By combining innovative processing technologies, such as ultrasound cavitation, with stability studies and in vitro digestion, she works to create effective and consumer-friendly solutions that enhance omega-3 incorporation into foods and support health and nutrition.
