Project Title: Development of hybrid meat and meat free products using novel extruded meat product alternatives from Irish grown pulses and oats.
Overview: A high demand for plant based meat analogues is the driving force behind Animesh’s research project. His work involves characterising Irish grown pulses and oats with high processability and low non-nutrient factors. He will optimise eco-friendly, green, and novel protein extraction techniques for pulses and oats with an aim to develop fibrous meat structures using high moisture extrusion processing. This is a cross-disciplinary project, which will work on a feedback loop from the processing team to crop researchers to improve the pulse crop characteristics such as protein content using modern agronomic practices.
Animesh has a Bachelor’s in food technology and a Master’s in food process engineering. He is an expert in ultrasound techniques and has gained experience in waste valorisation. He brings industrial as well as research experience, which will help him to solve real time problems during this project. Within this project, Animesh will gain experience in green extraction technologies and high moisture twin-screw extrusion.
He is an outgoing person and has good athletic abilities. Apart from research, his interests are in traveling and photography.
