To overcome the biggest challenge, reducing sugar while protecting taste, safety, and shelf life, Mór Taste partnered with Teagasc to tap into advanced food science and thermal processing innovation.

Challenge: Reimagining Low-Sugar Jams for Modern Consumers
Mór Taste was established to challenge the status quo of the food industry, and the brand emerged from a personal health journey and a professional frustration by the founder with excessive sugar use in food products. The core challenge was to develop jams with radically reduced sugar content while maintaining shelf life, meeting consumer expectations, and exceeding traditional products in taste.

Solution: Innovating Scalable Production and Validating Thermal Processing Methods
Through collaboration with Teagasc initiated via the Food Works Programme, Mór Taste received support in product and process development, nutritional profiling, and scaling of their manufacturing process. A critical part of their success was developing a scalable production process, including exploring and validating alternative thermal processing methods to ensure product safety and quality without compromising on natural ingredients and taste.

Impact: Driving Innovation and Elevating Standards Through World-Class Collaboration
Mór Taste products were developed with exceptionally high fruit content, no artificial sweeteners, and a naturally delicious taste in response to consumer trends and expectations. Since initiating work with Teagasc the company has scaled manufacturing and secured a permanent listing with Tesco in over 100 stores nationwide and online. Their efforts have been recognised and celebrated through awards including Blas na hÉireann and Shelf Life Magazine. Engagement with Teagasc is ongoing and focused on the development of new product ranges.
