Project title: Per- and Polyfluoroalkyl Substances (PFAS) within the Dairy Supply Chain

Biography: George is a Walsh Scholar based at Teagasc, working on per- and polyfluoroalkyl substances (PFAS) in the dairy supply chain. His research focuses on understanding how these highly persistent chemicals can enter dairy systems, how they may be transferred through milk and dairy products, and what this means for food safety, environmental health, and consumer protection.

PFAS are often referred to as “forever chemicals” because they do not easily break down in the environment. The bigger picture of George’s research is protecting food safety and public health while supporting sustainable dairy production. As dairy products are a key part of the Irish diet and an important export, understanding and managing emerging contaminants such as PFAS is essential for maintaining consumer trust, regulatory compliance, and the long-term sustainability of the agri-food sector.

George holds a Master’s degree in Food Safety and Quality Engineering and has experience in food and environmental contaminant analysis. He is gaining further expertise in analytical chemistry techniques, including liquid chromatography–mass spectrometry (LC-MS/MS), as well as working with laboratory quality systems and data management software relevant to accredited testing environments.

Originally from Kenya, George enjoys learning about how science and policy intersect to improve food systems. Outside of research, he enjoys reading, keeping up with developments in food safety and environmental health and dancing.
