Evaluating the use of Digital Twin in Spray-drying process
Biography
Shruti Somani is a PhD Walsh Scholar at Teagasc, working in collaboration with University College Dublin and supported by the VistaMilk SFI Research Centre. Her research focuses on using digital twin technology—virtual models that mirror real processes—to improve spray drying, a technique widely used to produce milk powders and infant formula. By building these models, she hopes to make manufacturing more efficient, reliable, and environmentally sustainable.
Spray drying is a cornerstone of the food industries. Even small improvements in how it works can help reduce waste, lower energy use, and ensure that products reaching consumers are consistently safe and high in quality. Shruti’s work connects advanced computer modelling with real-world challenges, aiming to bridge the gap between laboratory research and industry application.
Before starting her PhD, Shruti worked on projects that used hyperspectral imaging to assess food quality and predict seed vitality without damaging samples. She also has hands-on experience in food quality control and analytical testing.
Originally from India, Shruti is motivated by a passion for applying science to solve practical problems. Beyond her research, she enjoys discovering new cuisines and finding creative links between food and science.
