Project Title: Strategies for optimisation of plant-based meat analogues and hybrid products with fermentation technologies and innovative processing
Overview: Vishal holds an M.Tech in Food Process Engineering from NIT Rourkela, India, and a Bachelor’s degree in Food Technology and Management from NIFTEM-K, India. He is currently pursuing a PhD in the area of innovative plant-based and hybrid meat/plant-based products as part of the DAFM-funded UPLIFT project. His research focuses on optimising plant-based and hybrid meat analogues, prepared from Irish-grown plant proteins, using fermentation technologies and innovative processing methods to potentially improve texture, taste, and nutritional quality—thereby making plant-based diets and hybrid products more appealing and accessible to consumers.
