Project Title: Design and development of zero-waste valorisation routes for red meat industry by-products
Biography: Yonas is a PhD researcher whose work focuses on designing and developing zero-waste valorization routes for red meat industry by-products, with particular emphasis on bovine and ovine co-products. His research addresses global challenge: Transforming underutilized slaughterhouse by-products into high-value ingredients for food, feed, pharmaceutical, and related bio-based industries by optimizing upstream and downstream processing using innovative methodologies and data-driven approaches. This work aims to support a circular economy.
Current project: CirCoVal–Circular Bovine and Ovine Co-Products Valorisation, investigates efficient upstream and downstream processing strategies, including enzymatic hydrolysis, innovative extraction, and cascade processing, to maximize the recovery of bioactive peptides.
