Yueyue Chen
Project Title
SO-PLANTS: In vitro digestion, bioavailability & muscle bioactivity of plant based beverages
Biography
Yueyue is researching how plant-based protein beverages made from Irish-grown crops—such as oats, fava beans, peas, and quinoa—can support healthy ageing. With Ireland’s over-65 population projected to double by 2051, this research addresses key nutritional challenges older adults face, such as muscle loss and reduced digestive function. Yueyue is developing laboratory models of the ageing gut and muscle using human cells to assess how well these beverages deliver essential amino acids, and whether they can improve nutrient absorption and muscle strength. These models simulate age-related features such as inflammation, oxidative stress, and weakened tissue barriers. Yueyue has extensive experience in tissue culture and is skilled in RT-qPCR, immunofluorescence, Western blotting, and flow cytometry. Originally from China, she enjoys hiking, trekking, and watching films in her free time.
