4DSnacks – Innovative 4D Food Printing for Producing Healthy and Flavoursome Snacks of the Future.
Biography
Elizabeth Codjoe is PhD student conducting her research on the development of 4D-printed snacks using delactosed permeate (DLP) and oat flour. Her work explores how factors such as pH, temperature, and humidity affect printability, texture, and structural transformation in food printing. Her project aims to create sustainable and nutritious snacks while valorizing dairy co-products, supporting global efforts toward sustainable food systems.
With a background in Food Science, she has developed strong expertise in food product development, and still gaining experience with 3D and 4D printing technologies, and data analysis using R.
Originally from Ghana, Elizabeth enjoys watching football, and exploring new places when she is not working in the lab. She is a proud supporter of the Ghana Black Stars.
