“Adding value to pigmeat in the circular economy through product innovation in formulation and processing”
Biography
Isabel completed a BSc in Biology at University of Oviedo (Asturias, Spain). Her interests in food safety and quality control after some previous internship experiences led her to pursue a MSc in Food Biotechnology at University of Oviedo. She also participated in an Erasmus + at University of Minho (Braga, Portugal) developing her master’s final project.
Her PhD thesis aims to understand what the market gaps in term of the lack of diversity or high-quality premium pork products are. Once these gaps have been identified, she will explore the most relevant processing technologies, and innovations on meat product formulations. This will, in turn, contribute to increasing the value of a greater proportion of carcass components, increasing the proportion of added value for export products, and to meeting demands for sustainable, high quality added value products on the home market.
Outside her work, she enjoys discovering new places and capturing them with her camera. Also, trying new cooking recipes.
