Project Title: Tailoring the nutritional and techno-functional properties of milk by selecting specific protein genetic variants

Biography: Emilija is a dedicated dairy technologist with a proven professional expertise gained through working in a leading dairy company. Currently, as a Walsh Scholar, she is researching the genetic variants of milk proteins. The purpose of this research is to determine the properties of a high-quality milk. This kind of scientific breakthrough will improve the technological process and nutritional value of dairy products, as well as the economic sustainability of the dairy sector.

Often, the dairy industry faces the notable challenge of poor and non-coagulating milk, leading to manufacturing inefficiencies and causing an economic burden. The dairy science can provide appreciable knowledge of molecular traits that define a high-quality milk, and Emilija is determined to make an impact in this regard. Her research may set a new trail toward quality of milk and dairy products and efficiency of technological processes.
