Meghana Srinivas

Project Title: Biotransformation in milk: fundamental and applied aspects

Overview: 

Meghana is a PhD student at Teagasc, Moorepark. Her research focuses on the biotransformation of milk and milk products. With a turnover of €4.8 billion, the dairy industry is vital to both the Irish economy and its population’s health. The huge success of chlorinated solutions used as disinfectants in clean-in-place practices has helped ensure food safety along the dairy processing steps to the final products. However, the increased levels of disinfectant by-products, such as chlorate, can be harmful to consumer health, especially high risk groups including infants. As part of Meghana’s research, she will delve into understanding the microbial community of the dairy environment to identify bacterial species that are capable of converting chlorate to compounds that are safer for human consumption and suitable for use in the industry. During her Master’s at UCC, she has gained experience in microbial techniques and is eager to acquire molecular and synthetic biology techniques through the course of her PhD.
