Andrés Marín
Project title: PTMdairy -The role of post-translational modifications on the structure-function relationship and digestion of dairy proteins
Biography: Andrés is a PhD Walsh Scholar based at Teagasc Moorepark, registered with the University of Limerick, and supported by the VistaMilk Research Centre. His research focuses on understanding how natural protein modifications, particularly glycosylation and phosphorylation, influence the structure, functionality, and digestion of milk proteins, with a particular focus on caseins and lactoferrin. These modifications can affect important properties such as heat stability, coagulation, curd formation, and protein digestion.
His work aims to contribute to improving the nutritional quality and functionality of dairy products by identifying protein modification patterns that influence desirable functional and nutritional properties, including protein digestibility and the release of bioactive peptides, while also informing optimised processing strategies.
Originally from Colombia, Andres holds a Bachelor’s degree in Animal Sciences and a Master’s degree in Food Science and Technology. He has worked on several projects within the agri-food sector, with a particular interest in dairy science and protein functionality. Outside the laboratory, he enjoys reading and spending time walking in nature.
