Thilina Abekoon
Project title: Interfacing solute diffusivity characteristics within cheese matrices with sensor developments to create platform technologies
Biography: Thilina Abekoon is a PhD Walsh Scholar at Teagasc, working in collaboration with Munster Technological University (MTU) and Tyndall National Institute, funded by Research Ireland under the VistaMilk Research Centre. His research focuses on interfacing solute diffusivity characteristics within cheese matrices with sensor developments to create platform technologies to remotely monitor functional and quality indices. His work brings together food science, food technology, sensor development, and data-driven approaches to improve the monitoring and understanding of cheese quality during processing and ripening.
Before starting his PhD, Thilina worked on interdisciplinary research projects spanning food science, artificial intelligence, machine learning, and agriculture. He has experience applying computational and data-driven approaches to practical challenges in food and agricultural systems.
Originally from Sri Lanka, Thilina holds a BSc (Hons) in Food Science and Technology from the University of Peradeniya. He is passionate about interdisciplinary research and applying emerging technologies to address practical challenges in food and agriculture. Beyond research, he enjoys exploring new places, discovering new ideas and technologies, and finding new experiences.
